6 Pack Winnah & The Day of Memorials

So after the crazyness and the oversleepage that went on at home on Sunday I got my butt out of bed and took the drive out East to my summer cottage jammin the whole way with a 7-11 Iced Coffee and a bad ass playlist on my ipod. Yes that was me rockin out on the Long Island Expressway...
Today was gorgeoussss guys! Hope everyone had an awesome holiday and got to spend time in the sun with your friends and fam! I know I did :) So after spending last night with the fam and seeing Angels & Demons (which I thought totally rocked). Can we say BYOPC (bring your own popcorn)? I literally passed out cold. And woke up this morning feeling super refreshed but still with a stiff neck! I wanted to start the week off even though it was a holiday and get a good run in. I secretly mapped out my run yesterday and was amped and ready for it. I got headed out early and treked my way through a 6 and a quarter mile run in 50 minutes. It was hard let me tell you! The way back was mostly uphill and at one point I had to say out loud to myself "come on!" You all know sometimes you gotta pull a Jillian Michaels on yourself when you need a little push.

I pushed myself to the end and rewarded myself with a hell a good breakfast.

Look closer and you'll fall in love too. Cottage cheese, Kashi Crunch, naner, LOTS of cinnamon and a little drizzler of PB on top.

I then proceeded to make my way outside. attempted to play a little vball with the sister, passed out in the sun only to wake up with a good old farmer's tan and then crawled inside to make some lunch.

After lunch Deej, Jenna and I went out to explore the new local organic farm and pick up some goods for a holiday dinner feast. Of course we got some iced coffee (I swear 7-11 might as well hook an IV up to me this summer) and stopped by the local fish market to get some dinner goods. I came back, relaxed & went for pass out round 2 only to more enhance my farmer's tan, and then helped prepare dinner.

Our Memorial Day feast featured some JUMBO grilled shrimp, asparagass, whole wheat pasta salad, sauteed spinach & seaweed salad. Also a tiny bit of salmon. After my first plate I proceeded to go back for more jumbo shrimp and I'm proud to say that a 1/2lb of seaweed salad is now sitting in my stomach. yum.
After our feast Jenna and I sped back home and made it just in time to watch Jillian and her many sexy men. IF you love me you'll go on abc.com and nominate me to be the next Bachelorette. do it you know you wanna. My favorite thing to do with salsa is use it as a sauce for veggies and rice (tofu if I have it). I eat salsa straight out of the jar no matter what type - hot, mild, chunky, whatever. For the sauce trick, chunkier, more mild salsa's work better (like a Mexican marinara, if you will).

ok so a recipie with salsa or hot sauce??

Maybe a spicy fritatta? using hot sauce in it? and a mexican fritatta with salsa? ooorrr a taco salad smothered in salsa??? how bout...a stuffed jack chedder cheese and turkey bacon butterflied chicken with..you got it..salsa lol oh count the ways!

Ah. Hangovers. I had a monster one last weekend.

Salsa. I make a kickass creamy salsa chicken + black bean crockpot dish that rocks. We eat it over wild rice 1 night and wrapped up in a ww tortilla for leftovers.

This salsa chit better be spicey tho. Cuz Erin likes it h.o.t. I don't like to skrew around with weak candyass salsa or hot sauce.

  15. Not food related, but I cracked up when I saw your goose picture, as I just put one up on my blog myself. Are they not the fuzziest, cutest things ever?

    Then they grow up and come at you hissing and spitting in their demands for bread, but whatever. They're cute when they're little...
