Not So SunnyDay & Big S Farms Giveaway!

happpppy sundayyy. does anyone else feel like this weekend did NOT exist?! seriously I don't remember this weekend happening...well maybe that's because I was disfunctioning for half of it.
last night I was in serious recovery mode. I took it down a notch by watching Bride Wars (no tequila involved) with Deej and a bowl of popcorn. btw Bride Wars was NOT good. I literally passed out with the computer and my google Reader open on my lap like 20 seconds after the movie was over, sooo about 9:45. Still disfunctioning I crawled upstairs and went into a state of unconsiousness until about 8:30 this morning. While I drank my coffee this fine chef concocted this beauty.


After breakfast Deej decided that although it was the crappiest day EVER it would be a good idea to go out to Greenport (our summer cottage out East on the island) and garden and make the beds a.k.a drive an hour and a half to make 6 beds and pretend like she's going to plant in the middle of a rainy day..
SO I decided to accompany Deej and Grammy for the car ride because if I hung out in my house all day long by myself I miiiight go insane.

When we got out East (yes us Long Islanders classify anything East of where we leave as "out East" aka Suffolk County ish) we stopped at this classy Stop & Shop to pick up some goods to make lunch. This gloriousness was made when we arrived. Because hey when it's raining and you have no other chores but to make the beds in a 4 room house what else would you do but eat...


LOTS of veggies, some Arnolds Bread, LC French Onion, Tribe Garlic Lovers hummus, some BBQ soy chips and of course Newman's Own Pineapple Salsa was consumed (about 3/4 of the jar) .... can we say Salsa Addicts Anonymous..

For the rest of the day while Grammy and Deej icked around I hung out with Jillian Michaels (also known as reading her book and eating a White Chocolate Macadamia Luna Bar)

mmmmmmm

Guess what guys! I registered last night for my first 10K :) I'll be running the NYRR New York mini 10K on Sunday June 7th :) Yesterday I picked up some new wheels to help guide me through the run! Are any other NYers running this!? I'm definitely going to register for the September 20th halfsies too! It says on the rules that headphones are strongly discouraged...does that mean no music?? Well at least it sounds like you had a fun time despite the cruddy weather. It's nice just to be lazy on the weekend every once in a while! And congrats on the marathon! Totally exciting!

Haha, I'm so not creative with salsa... chips and dip or spreading on wraps is my idea of deliciousness ;)

i'd love to enter your salsalicoius giveaway, let's see.. my favorite thing to make using hot sauce (usually cholula) is breakfast chilaquilles! it is basically eggs, asiago cheese, crunched up tortilla chips, jalepenos, sour cream (which i have since replaced with greek yogurt) & hot sauce. i learned to make it when i was a waitress at a breakfast spot. yum!

anyway, sign me up!

I use salsa over baked chicken and then sprinkled with cheese! Maybe not very creative, but delish none the less!!!

ok so a recipie with salsa or hot sauce??

Maybe a spicy fritatta? using hot sauce in it? and a mexican fritatta with salsa? ooorrr a taco salad smothered in salsa??? how bout...a stuffed jack chedder cheese and turkey bacon butterflied chicken with..you got it..salsa lol oh count the ways!

I put salsa on so many things: nachos, quesadillas, burritos, and chili, of course. However, I also really enjoy a fruity salsa (like peach or raspberry chipotle) piled on top of a baked sweet potato with a little Quark or sour cream and possible some cheese. But just the sweet potato and salsa is delectable!

I also make easy and healthy salsa chicken by dumping a jar of salsa in a crock-pot with a few chicken breasts and cooking it on low for 7-8 hours. You should also try scrambling eggs up with some salsa and cheddar. Yum!

Okay, now that I've demonstrated that I'm a raving salsa addict . . . thanks for the great giveaway! :D

I love using salsa with baking chicken or pork. I first let it marinate in the fridge for a few hours so the taste is infused.

Ah. Hangovers. I had a monster one last weekend.

Salsa. I make a kickass creamy salsa chicken + black bean crockpot dish that rocks. We eat it over wild rice 1 night and wrapped up in a ww tortilla for leftovers.

This salsa chit better be spicey tho. Cuz Erin likes it h.o.t. I don't like to skrew around with weak candyass salsa or hot sauce.

My favorite thing to do with salsa is use it as a sauce for veggies and rice (tofu if I have it). I eat salsa straight out of the jar no matter what type - hot, mild, chunky, whatever. For the sauce trick, chunkier, more mild salsa's work better (like a Mexican marinara, if you will).

Hmmm I don't like spicy salsa but I'm a HUGE HUGE HUGE fan of peach/mango/fruity salsa!! I lvoe putting it in wraps with LC, hummus, and spinach. SO delish!! Have a great week girly<3

i havent entered that 10K yet, but maybe i will...i cant remember off hand if thats my weekend to work or not. as for the "no headphones" policy...they say that for every race, and ive never done a race without my ipod, nor would i ever consider it...so i say rock the tunes!

I'm not creative with salsa, but I love it with regular tortilla chips! I could seriously eat that everyday for every meal if I could.

Salsa!! My friend recently recommended making salsa chicken in the slow cooker!

And who can forget the oh so good Salsa and tortilla chips!!

Ok I am realllly dying to try this stuff... so here is my recipe

Southwestern Turkey Meatloaf
1lb (or more) ground turkey
1/4 jar Big S Salsa
1 cup ground tortilla chips
1 egg beater
1/2 can corn

Mix it all up and bake, then you top it off with a little more salsa for the final kick.. I usually double the recipe to have leftovers!

My favorite way to use salsa is on a whole wheat wrap with guacamole, cheddar cheese, black beans, brown rice, corn, lettuce, and tortilla chips on the side!

oh wow! :) One of my favourite ways of eating salsa is a 7 layer dip!

Salsa, sour cream, cheese, beans, green onions, beef, tomatoes. Of course now I make it using vegan products! :)

My favorite thing to do with hot sauce is to use it to make hummus! It really adds a great kick. I also add hot sauce to my salads. :-)

This isn't all that creative, but I like using salsa as a salad dressing! You could make a great tasty salad with lettuce, black beans, corn, and top it with salsa. Yum!

Salsa is the new ketchup. I can't really think of a new & creative use for salsa except add it to just about anything even mac & cheese.

I sometimes just eat salsa out of the jar with a spoon with extra hot sauce.

Salsa is great on anything. Eggs, chips, even cucumber slices. But I love it in my shrimp and 3 bean salsa dish. Black beans, white beans and pinto beans (a 1/4 up of each) add a 1/2 cup of salsa and 4 oz of shrimp. Sprinkling some cilantro and lime juice and enjoy!

Sautee onions, garlic and your choice of veggies. Then add Slasa and Cream Cheese to get a thick sauce. Season to taste (I love white pepper!). Then add in some brown rice and dig in!

i like to add it to a can of plain old tomato sauce to make a zesty sauce. use it over veggies, rice or even pasta for something a little different!

I love salsa in an easy recipe for Chicken Tortilla soup:

2 skinless, boneless chicken breasts, cut into bite size pieces

1/2 tsp. olive oil

1/2 tsp. minced garlic

1/4 tsp. ground cumin

2 cans low sodium corn kernels

1 can black beans, drained and rinsed

1 cup chopped onion

1/2 tsp. chili powder

1 tbsp. lemon juice

1 cup chunky salsa

In a large pot over medium heat, saute the chicken in the olive oil until cooked through. Add the onion, garlic, cumin, and chili powder and cook for 3-5 more minutes. Add the chicken broth, corn, black beans, lemon juice, and salsa. Reduce heat to low and simmer for 20-30 minutes. Garnish with sour cream, shredded cheese, and tortilla chips if desired.

I use salsa in just about anything. From chips to wraps, salad topper, or on top of my omletes. I have also been known to spoon some out of the jar. ^_^
