today. is. hawt.
i wanted so bad for dinner to be easy.
dinner tonight was one of those things where you i just couldn’t decide what in the bloody name i wanted to eat.
feta burger…nah. pancakes…maybe? nah. kitchen sink salad? nerrp. gah. i couldn’t figure it out.
one thing i did know was that i had received this baby in the mail…
had a package of ‘fu in the fridge..
and kind of wanted to go the snack plate route…
somehow i found myself putting the ‘fu in the press, and then the magic just happened.
before i knew it i was feasting.
hmph. what happened?
fu pizza. happened
serves 1. or more if you want to dubs, trips, or quadroops the recipe
- 6oz firm tofu (pressed & if you’re cool like me you can do it in the tofu xpress and save your life)
- 1/8c tomato sauce (no salt added)
- garlic powder, dried oregano & dried basil (because i don’t have a cool herb garden)
- roasted garlic (because mary taught me how)
- sliced tomato
- 1/2 tablespoon nutritional yeast
after your fu has had the water pressed out of it and is pretty much dry as a bone. slice it in half and pan fry using non stick spray until both sides are a crispy brown color
while they’re getting a tan prepare your pizza sauce by combining the tomato sauce, the garlic powder, oregano & basil.
slice your tomato and unpeel or squeeze out your roasted garlic
to roast garlic simply peel garlic clove, wrap in tinfoil & i placed mine on the barbeque for about 40 minutes at a high temperature (about 450). that’s it!
after your fu is fried, place it on a sheet of tin foil and top each piece with half of your prepared sauce, a few pieces of roasted garlic, some sliced tomatoes & 1/4 tablespoon each of nutritional yeast
place in the toaster oven on broil for about 7 minutes, until the nooch is slightly melted.
remove from oven, don’t burn your fingers like i did, and feast!
amazing. if you don’t mind i think i’ll pat myself on the back for this one.
another thing that’s amazing? the nutritional stats! you can enjoy both of these pizzas for a mere
144 calories, 7g fat, ,6g carbs, 4g fiber, 16g protein. yes, please and thank you!
my dinner would have been vegan, if i hadn’t enjoyed a couple of servings of hannah’s tazatiki to
drench dip my roasted veggies in.
on the side i had some roasted beets sprinkled with cinnamon, and a big bowl of roasted broccoli, eggplant & grilled peppers with the standard sliced shroomies.
i’ll go ahead and pat myself on the back for my 93.2% vegan dinner.
damn you hannah. why do you have to be so addictive.
if only i could find a tall dark grecian man to replace my savory, white mediterranean dip
time for dessert don’tcha think?
