peanut butter pancakes & weekend fun!

SO last we talked, i had left you high and dry with the most recent greatest thing i had discovered at trader joe’s.

it seems you all were pretty amped to get the tjs the next day and i’d LOVE to hear if you made it there, found it, and/or what you’ve been creating with your peanut flour.

you’re welcome tjs. i’m pretty sure they should send me a portion of their peanut flour sales from this weekend..

if you’re wondering if i’m still in love with my peanut flour, well i’ll let you make that decision after i note that i did in fact have peanut butter protein pancakes for breakfast and dinner on friday night.

peanut butter pancakes

  • 1/4c trader joe’s peanut flour
  • 2 extra large egg whites
  • 1 tbsp wheat bran
  • 2 tbsp water or almond milk, soy milk, milk milk, etc
  • 1/2 tsp baking powder
  • cinnamon, stevia & vanilla extract

blend it all up, throw ‘em on the pan, flip flip flip, plate plate plate, eaaat eaaat eaaat

for breakfast i used the remainder of tofu pudding (1/2 block of pressed firm tofu + 1/2 scoop protein powder) & half a small banana. it was seriously an amazingly delicious breakfast.

and the whole meal clocked in at 326 calories, 9g fat, 26g carbs & 43g protein!

…and so a with deliciiousness factor of 10/10 you should naturally make them again less then 12 hours later..

and they were just as good. this time they came with a serving bowl single sized julie dish of veggies & cedar’s taziks. (cedar’s tzatziki garlic & cukes).

blueberry protein smoothie (1c almond breeze, bloobs, 1 scoop vanilla protein powder, 1/2c decaf cawfs)

roasted vegetable salad + goat cheese + balsamic = nuff said.

how was your weekend?!

mine has been fabulous. filled with lots of coffee dates, a homemade gazpacho that i want to go to heaven and die for, lunches and nights out with the girls and fantastic weather!

the one bad thing about the weekend? eye allergies. which has forced me to fall into a glasses wearing only kind of weekend.

all in all i’m bringing sexy back..

with a belly filled with protein cookie dough peanut butter and jelly oatmeal, i’m off to enjoy the weather with the fam!

on a side note sorry i’ve been so out of it with the commenting but this weekend has just been so jammed packed! welcome new readers, i love you dearly :) and i’ll be back on monday catching up on all of your lives!

  1. Ahhh! Yay! A pancake recipe for the peanut flour! I couldn't go to TJ's this weekend, but I am going next weekend! I hope that they carry it. There are two TJ's near each other, so I will definitely hit up both in search of it. I copied your recipe so that I can have some peanut pancake goodness myself one of these days soon! THanks so much Julie :) Andddd...I am going to be making that kick ass protein pudding soon to add to my oats and such. Woo! Food is so good! HA!

And you know what girl, although it feels really sketchy and ovewhelming to know i am just sorta abandoning tons of commenting duties...I hate that they have started to feel like duties, so it's nice to take the weekends off from them!

  7. I dont have a trader joes near me but I found peanut flour online that Im going to order!!!!!!!! Those dang pancakes look so darn good! I wish we lived closer, so I could have some!!!! Yum!!!!!!

  8. I went and bought some peanut flour from TJs today! It was the only thing I bought, and the guy asked me what I was going to do with it. I was like... um.... don't question my grocery purchases... haha. When I got home I made a delicious peanut butter smoothie :)

  15. i made peanut flour & banana waffles too (with crushed banana inside and atop).

    the peanut flour also worked wonderfully to make little 'cookies'. I added 2 tbsp tj's peanut flour to ~1tbsp water, 2 packets of truvia and salt to taste. Mix quickly by stirring with a spoon, and shape cookie - then eat later. yum yum!

    we also made cookie variations with cinnamon, cocoa powder, and red chili pepper flakes.

    to combat the eye allergens, you could wear a pair of 'dust goggles'. you can get them at a safety supply store for about $5. They have models that look sorta like oakleys
    no so feminine, but great if you wanna go biking or running :D

  18. I did the same thing... Sat rolled around and I didn't so much as glance at any blogs... including my own... no comments, nothin & it was glorious! Was nice to spend the whole weekend AWAY from the computer... ok, I lied... I did play a few hours of BattleField with the husband, but that's quality couple time :D haha!

  19. hahahahah I am laughing bc I have done that with my glasses before! glasses on glasses action! i have had to befoer, when I am wearing my real glasses then its sunny out so I need my shades, I look ridic, but it works, it makes me want those flip ones and look like a tourist haha

    those peanut pancakes sound amazing! they would be great in my waffle this morning...I have to scope that out at trader joes fa shoooo

  21. Have you noticed peanut flour anywhere besides TJs? I've seen it in other blogs but they mentioned they got it from there as well. I use soy flour which has the same nutritionals and what not but it'd be insteresting to try something new. :)
