today has been great.
just great. and for once i’m not even being sarcastic. uh what?
today has been great because although i have an utterly extensive “to-do” list, i’ve managed to take it slow, relax a little, and still get things done.
productive AND peaceful? is that even possible?
i’d like to thank columbus for my peaceful piece of mind.

so anyways last night involved a quite lovely & late family date! van, deej, jenna & i (dad, mom & sister for all the newbs) were owls last night and caught the late showing of the social network. while the movie left me wanting to go home and google the crap out of everyone involved in the creation of facebook, by the time i got home i was a deadbeat and hit the sheets hard.
and you wanna know what? i didn’t even set my alarm clock.
even though i knew that i had a lot to get done this weekend, which included getting in a good gym session today, i just really went with what i felt like doing, which was sleep.
sleep i did. and then when my body woke me up, i threw on my glasses, brushed my teeth, and went downstairs to enjoy a leisurely saturday morning, knowing that i had the whole day ahead of me to produce productivity.
and enjoy my breakfast i most certainly did.
along with a steaming hot cup-o-joe kudos to the lovely naomi (her uncle’s coffee is straight from heaven) & a healthy dose of d.c. housewives
it felt & tasted glorious.
breakfast sadly came and went and after hanging with deej & grammy for a few, i got my butt in action and cracked down on my list.
after throwing a few loads of laundry in the machine & cleaning my comforter which i’ve been dying to do forever i got the sudden desire to go to the gym
prior to this i was thinking that today would be my off day and i’d get back into it tomorrow, but when i started getting antsy i just went with it.
i started out with 25 minutes on the elliptical with varied cross-ramps & resistances and then transitioned over to the treadmill for 15 minutes of hill running intervals and 5 minutes of speed walking
it’s so weird to see different faces in the gym! i’m so used to the usual @$$-crack of dawn go-ers that i forgot the potential of the lunch time crowd to provide some decent eye candy ;)
i headed downstairs and hit the weights for some chest & tricep action.
the liftage included barbell chest presses, tricep kickbacks, pushups & dips, v-rope pressdowns & cable crossovers and it was fab.
do you ever have those workouts where you know you’re working hard but you just can’t seem to sweat? yep today was one of those days. wa-eird!
whenever i workout before lunch i always come home not to hungry. this allowed me time to peak into my fridge and see what kind of shibang i wanted to “throw together”
i would like to say this was a ridiculously weird “throw together”
i took your pepper advice and first sautéed up some onion, red & green bell peppers, mushrooms and cauliflower together in their own juices. we had a costco-sized case of baby bok choy that was on it’s way out so i took about half the container and cooked that up in minced garlic, lime juice & red wine vinegar.
after letting both cooked dishes cool for a minute or two, i tossed them into a bowl with some romaine & tomatoes and a can of tuna and topped it off with some guacamole & peach mango salsa.
shut up. i know so random.
tasty though and that i can’t deny
how much do you love bok choy? the crunchiness of it was the perfect addition and for some god-for-saken reason the flavors just all worked together.
post lunchtime it was time to get re-serious with my list.
so i broke into my new favorite and ridiculously addicting snack kudos to averie & hit the books with a cup of tea & a hefty helping of averie’s caramalized cinnamon-sugar chickpeas.
i promise that if you make these amazing crusty chickpeas, you will stand in the kitchen and eat half the batch before you even think about putting them in tupperware.
now that’s brain food at it’s best. oh. did i mention i brought the rest of the first stash i made to the movies last night? actually i made van grab them from the fridge before he left the house.
imagine a middle aged man walking into a movie theatre carrying a small tupperware of crunchy chickpeas. now that’s father love right there.
gotta get back to crossin off my to-do’s!
i smell a shrimp & goat cheese feast in my near future ;)

- what’s for dinner tonight? it’s just me and the sis tonight so i think we’re gonna grab some take out and just hang. i’ll prob roll with shrimp and veg so i can have a goat cheese & balsamic part-ay!
