can we be honest with you?
i don’t hate mondays.
ugh. i know. so many people do.
and while you may be feeling like this:
most mondays i feel like this:
i’d like to give this monday’s spin class the award for “put julie in a great mood for the first day back after a long weekend”
i also think that a cup of heavenly blend should get the runner’s up award.

on the way to work this morning, while enjoying my traffic snacks i started thinking about how strange it is that i’m usually in a great mood on monday mornings.
i was in an especially good mood this morning, because along with my saturday night frozen yogurt swim i stuck the spoon in my handbag just because i thought it was a great spoon.
my friends thought i was crazy. but crazy i was not when i thought i didn’t have any egg beater utensils this morning.
voila! the spoon saves the day :)
i pranced into work this morning, excited to hear about my coworkers thanksgiving festivities only to find that every. single. body. had the post weekend blues.
way to put a damper on my monday high.
so instead of taking on the “if you can’t beat ‘em, join em” mentality, i swiped a seat at the end of the conference table and relished in my monday staff meeting breakfast
protein JAM PACKED oats-ta-go
simple oat bran serving + mrm metabolic whey vanilla serving + peanut flour paste.
it’s a good thing on mondays i only work half day because i couldn’t let the office blues bring me down. when the clock struck time to leave i was outttta thereeee.
did someone say mid-day feast?
clockwise from the left: a goat’s milk creamy cheese, pumpkin & jelly omelet served with a rice cake & some cedar’s tatziki for dippage, a BIG bowl of my pumpkin veggie soup, & a nice platter of okra, turnip & eggplant fries with some sliced mushrooms.
a good leg workout always brings out the beast in my belly the next day.

a couple posts ago i received a comment explaining exactly how i cook my omelets.
well today is your lucky day!
a sweet sweet omelet how-to
first: take 4 or 5 (or 6 or 7) egg whites and separate them from the egg yolks.
second: take a pinch of cream of tartar, a droplet of vanilla extract, a dollop of cinnamon & a pinch of sweetener and beat (with an electric beater) until white fluffy peaks form (about 1 minute)
third: let it sit for a few minutes while you get your omelet pan out and heat it on medium low (don’t make the heat too hot or it will burn!
fourth: pour your egg whites on to the pan and then..wait. a bubbly cloud will form and the egg whites expand upwards. this is good! allow your omelet to cook on one side for about 3-4 minutes and if you want lift the edges a bit. after it looks pretty cooked on one side, flip it over and let it cook for the same amount of time on the other side.
fifth: if you want to fill your omelet with love, now is the time. as the other side cooks put whatever it is you want to fill your omelet on one side (the side that is already cooked). today’s included cream cheese, pumpkin & jelly but i’ve used laughing cow, cocoa powder, goat cheese, feta. etc you could also do a savory one with peppers, onions, etc!
sixth: close your omelet & flip it! let the insides melt a little bit and when the meltiness is to your liking, plate it and FEAST.
