it’s good to see i’m not the only one who participates in the dessert for breakfast parade!
truth be told is that i try and make my breakfast resemble some sort of dessert every morning. i mean because i can’t imagine starting the day a better way then with dessert, right?
the artic zero breakfast was just okay and i think it could have been better if i didn’t guzzle the entire pint in one sitting. the massive sugar intake at one shot did my tummy no good. but alas lesson learned there and from now on i’ll stick to the usuals
because they’re just as good
even better actually.
after watching the snooze sag awards last night i hit the hay so i could be up bright and early for spin.
i will forever heart starting my monday off with a spin class. even if the teacher talks about her weekend for the first half of class, i just continue to pedal on my way
i came home, showered it up, threw on an outfit, grabbed my eats & started on the trek to work
i didn’t have time to munch my egg beater (drizzled with some sugar free chocolate syrup) before i left the house so i threw my mug in my cooler and enjoyed it at red lights
obvi with the ever-so-amazing hot cup of cawfs
...apparently i was saving some egg beater for later...

on days i work and workout breakfast comes in three parts
part one happens at 5am when i grab a rice cake with peanut butter on my way to the gym. i find this holds me over and gives me the energy i need to get intense and not puke that early in the morning
part two is an egg beater in a mug that i munch around 7ish as a post workout protein snack to hold me over until i get to the office around 9.
part three is usually overnight protein oats enjoyed at my desk around 9;15ish give or take topped with peanut flour paste, sugar free preserves (apricot and strawberry are both at my work fridge) and chopped almonds

i took a tip from katie and got smart by making a 4 serving batch of oatmeal yesterday to get me through the week
now that school is starting and my work hours are going to increase, i need to step my make ahead preparation game up a notch
so yesterday i mixed the following in a pot and then separated it into 4 tupperware containers, that way i can just grab and go instead of slaving over the microwave every night
make-ahead huge batched protein oats
- 1 cup oats
- 2/3 cup oat bran
- 4.5 cups water
- cinnamon, stevia & vanilla extract
- 68g vanilla protein powder
just bring everything to a boil, reduce heat to medium and cook while stirring to make sure it doesn’t burn. when it’s cooked through to your liking add in the protein powder and mix. then separate into 4 containers (about 2/3 cup servings each) and keep in fridge until you need to grab n go!
the next day you can add whatever your heart desires!
i will forever be doing that from now on. katie you’re a genius!
today’s lunch featured a very heavy salad (leftover from last night’s family salad), and added in was a can of tuna, a sargento reduced fat colby jack cheese snack & dijon mustard with balsamic (that i keep in the office fridge)
if you haven’t gotten the drift yet, i keep alot in the office fridge
if you have an office fridge don’t be afraid to take advantage of it! but don’t be surprised if one day your brand new only-used-once three pepper athenos hummus is mysteriously missing.
other things i keep at work:
- a jar of pb&co white chocolate wonderful peanut butter
- a package of rice cakes
- sugar free preserves (strawberry & apricot)
- laughing cow cheese wedges
- an apple or two
- balsamic vinegar
the things i don’t mind sharing i put on the side shelves, but the things i don’t want people to eat i store in the bottom drawer. apparently they didn’t get the “don’t touch or TAKE HOME my hummus” memo
the point i’m trying to make here is to not be afraid of storing things at work! it’s better then lugging things like dressings, peanut butter, snacks back and forth everyday and makes eating at the office so much more enjoyable!
i mean because if we’re there the majority of time during the week, we might as well keep the things we enjoy where we are, right?
