we survived the night, thanked our lucky stars & celebrated with glorious breakfasts
in fact irene was supposed to hit us hard around 8-9am. apparently my body recognized this because at 8:45am i shot out of bed and made a b-line to the coffee machine

ina & irene make one heck of a combo
hurricane survival banana pancakes
based on the barefoot contessa’s banana sour cream pancakes (my changes are in bold next to her’s)
- 1 1/2cups flour (1 1/2 cups whole wheat flour)
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1 1/2 teaspoons kosher salt
- 1/2 cup sour cream (1/2 cup nonfat greek yogurt)
- 3/4 cup plus 1 tablespoon milk (3/4 cup + 1 T skim milk)
- 2 extra large eggs
- 1 teaspoon pure vanilla extract (1/2 T vanilla extract)
- hefty sprinkles of cinnamon
1 teaspoon grated lemon zest
- unsalted butter
- 2 ripe bananas (sliced)
easy peazy! combine wet ingredients (minus bananas & butter) in one bowl, in a separate bowl combine dry ingredients. combine the two into one larger bowl and mix to combine until the batter is well combined & there’s no clumps left
heat your skillet (i used our super swanky and highly underutilized electric griddle)
spray with non stick cooking spray & because it’s sunday and you just survived a hurricane, plop some good old butter on that skillet
drop big spoonfuls of the batter onto the well heated skillet & sliced banana pieces onto the batter circles
obviously the first couple of pancakes are your ‘test round’
but eventually they should look as glorious as this
serve on a nice white fancy plate and let EVERYBODY dig in.
top your cakes to your liking (maple syrup, peanut butter, jelly, other fresh fruits, etc)
grammy gets first dibs though because she did request them
so if you’re wondering if we’re doing alright?
well if you take out the pancake food coma, we’re doing juuust fine

on another note: my back is still pretty bad, i’ve been heating/icing it a lot (deej did this really cool heating pack thing where she wet a washcloth, rinsed it out, microwaved it for 45 seconds, then wrapped it in tinfoil & put it in a ziploc bag ---> works amazing). i’m dying to get back into the gym but i know i need to wait until i’m better. any tips for lower back pain cures? i’m hoping it’s not a slipped disc or anything but i’ll keep you posted!
