when i woke up and decided to blog yesterday, i was like i want to give away these chia seeds in a majorly fun way. and it just came to me, and then i didn’t have much time, so i made everyone else feel the panic.

here’s a look into the most deliciousness of this weekend
this peanut butter came into my life this weekend, and i’m telling you it’s life changing.
i have no idea where it’s from, but jenna brought it home from some natural foods grocery store on the upper east side in manhattan. it’s fresh churned, and literally it’s fresh churned.
i’ve never had peanut butter that’s so peanut buttery.
please don’t ever leave my life.
i’m nut butter indecisive every day, but it was amazing on a simple bowl of egg white oats
here we go again, except this time i plopped it on a bowl of baked protein oatmeal that i just crumbled up oatmeal style after it cooked and munched it with a spoon
it’s called ‘too lazy to stand over the stove’ oatmeal
lately i’ve wanted nothing to do with lettuce.
lately i’ve been craving roasted vegetables like a mad woman
so i cooked up a nice hefty sized pan of random roasted vegetables so i had them good to go to throw into salads throughout the week/weekend.
roasted broccoli, cauliflower & green beans in nutritional yeast, chili powder & italian seasonings
a few weeks ago i saw katie roast green beans and i thought it was genius.
obviously i had to follow
roasted vegetable salad with sweet potato, jamie eason’s monster meatloaf & a tahini drizzle dressing
someone asked a few posts ago how i make my tahini drizzle.
tahini drizzle dressing: 1-2 tsp tahini ( i keep it refrigerated so it’s thick & cold), 1T braggs liquid aminos, juice of half a lemon or lime, 1/2 stevia packet, a scoop of dijon mustard, and a drizzle of balsamic vinegar
obviously you can tell i just splitz and splatz, no measuring necessary.

i’ve had my eyeballs on naomi’s coconut & basil marinated chicken for a few days now (well since the second she posted the recipe)
and so when deej took an enormous package of chicken out of the fridge this weekend to make room for new shit in our freezer defrost, i hopped on a few of those pieces pronto.
i put 3 large chicken breasts in a ziploc bag with 1T coconut oil, a hefty splash of bragg’s liquid aminos, the juice from a whole lime, & tons of chopped basil. let it sit in the fridge overnight, and remembered it last night when i was getting dinner on the brain.
instead of just cooking it up, i decided to turn them into chicken nuggets
coconut & basil chicken nuggets
so i took naomi’s amazing recipe & diced up the marinated chicken breasts, threw them into a container with a about a 1/2 cup of panko bread crumbs, 1-2T almond flour, chili powder, a sprinkle of nutritional yeast, sea salt & dried oregano
shake shake shake! and then baked them at 400F for about 25 minutes
they came out amazing. i seriously can’t wait to eat them for lunch.
i had them on some kale chips and drizzled honey mustard all over the salad
on the side i had a room full of screaming giants fans.

bahhhhhhhhhhhh! Erica did not win.. lame ;). But a big congrats to Deej! I'm sure shes thrilled. My parents are actually huge Giants fans too and my grandfather used to have season tickets! I am only anti giants because of Josh ;). I think secretly, deep down inside, I always root for them. That rainbow cookie cake? Definitely winning! How awesome! And I want those nuggets. Naomi...that girl is rockin. Umm winning moment this weekend?...PATSSSSSSSSSSSSSSSSSSSSSsss.

ReplyDeleteI have to say how much I am loving your recipes right now as well - I'm on a blogging break because documenting my food wasn't doing me any good, plus I am sidelined from running with a stress fracture so I'm not reading many blogs either...except yours and a few others. Your enthusiasm is infectious and I can't wait to try out more of your oat combinations. I also need some roasted veggies, stat!

ReplyDeleteWe have a "make your own nut butter" machine where I work, and the end results are always pretty fantastic. Recently we've been adding unsweetened cocoa to the mix, and it's FABULOUS.
My weekend was NOT winning. I worked. Today is my Friday :)
That FRESH CHURNED peanut butter is calling my name! Neeeeed. I think they have those grinding machines at Whole Foods, right? I'm going to go nut butter hunting tomorrow!
