hello hello! i’m so glad you liked my love story
i have to admit that i wrote that on my train ride home, via my iphone, then emailed it to myself
by the time i got home pretty late from work, all i had to do with copy, paste & insert pictures
now that’s a commitment to blogging.
actually i’m just so addicted to you guys that i’ll find any rhyme, reason, or route to blog.
speaking of working late.
since i started my new job, and things are slightly busier then they were in the past, quick, delicious & easily portable healthy snacks have become my savior
i’ve become the tupperware & insulated bag lady
ain’t no shame in that
i’ve been loving playing around with different variations of protein muffins, bars, snacks, etc and i wanted to share with you my newest love & creation
it’s nutty so prepare to be nutted OUT.
SUPER nutty protein muffins (makes 10 muffins)
disregard my gross muffin tin that’s from the 1920s. it’s not my fault it’s deej’s
ingredients:
- 1/2 cup oat flour (ground up oats in food processor)
- 1/2 cup almond meal (i used trader joe’s)
- 2 servings vanilla protein powder (i used my true protein blend)
- 8 oz sweet potato & apple baby food
- 3 T unsweetened cocoa powder
- 1/2 cup nunaturals stevia baking blend
- 4 large egg whites
- 1/4 cup walnut pieces
mix wet ingredients, & dry ingredients then stir in the chopped walnuts. use a 1/4 cup measuring spoon and drop into sprayed muffin tin or muffin holders. bake at 350 for 25-35 minutes until a toothpick comes out clean
enjoy 1 or 2 or 3 or 4!
they’re delicious & the walnut pieces just skyrockets the taste factor
a few of these make the perfect mid-morning or mid afternoon snack
