peanut curry crock pot chicken & sunday prep!

i love sundays, don’t you?

thank you all for the beautiful words back from my last post about my legs. i agree with everyone and every time i got a little email back with a comment i died a little inside with heart warmth.

i’m embracing my transformer quads, whether my pants like it or not.

anyways. have i told you i love sundays?

this weekend i took a glorious two days off from the gym

i had plans to wake up and go this morning, but my body said ‘no julie, stay in bed a little longer’ and so i did

and then i was going to go after breakfast

but deej said ‘want to go to tj’s and bjs’s?’

uh yes.

and so the gym got pushed back, because there’s always tomorrow and i had a lot of cookin’ to get done

this weekend i’ve just be in love with my crockpot.

i used it twice in two days.

yesterday before we went out for the afternoon i made a big old batch of chef meg’s slow cooker spanish chicken (using that recipe) that way when we got home from our day of fun dinner was all ready to go

well it almost wasn’t. thank god i turned around and saw the tail of the pot hanging loose!

it was fan freaking delicious and so easy to make. i do have to mention that i left out the peas & the onions

today i spent the day sleeping, reading blogs, food shopping, and cooking

what’s been going on in my kitchen today i bet you want to know…

LOTS of roasted sweet potatoes (half in cinnamon & half in italian seasoning and nutritional yeast)

a BIG batch of roasted cauliflower & brussel sprouts (deej loves roasted brussels too so she throws them in her lunch tupperwares also)

and  finally on sundays i usually like to make a ‘main meal’ type dish that i can throw in tupperwares for lunch, snacks, or even have it ready to go for dinner when i get home on those dreaded late nights

i’ve been getting sick of plain roasted chicken, and turkey muffins, and i was trying to think of something new and different

all of a sudden it came to me!

i’m going to make my favorite soup recipe into a chicken crock pot meal

and so i bring to you, the MOST delicious crockpot recipe i’ve made to date.

peanut curry crock pot chicken

also known as the best thing you’ll ever eat.

  • 1-2lbs of chicken breast (cleaned and cut into 1 inch cubes)
  • 1- 15oz can of crushed tomatoes
  • 1 red bell pepper
  • 3 tablespoons peanut butter
  • 2 tsp curry powder
  • 2-3 tablespoons soy sauce (or bragg’s liquid aminos)
  • 1/4 cup chopped fresh cilantro
  • a crockpot
  • and a bro-five for me because once you make this you’ll be kissing me with joy

clean, cut and throw your chicken into the crockpot. pour the can of crushed tomatoes on top. in a food processor mix the peanut butter, curry powder & about 1/3 cup of water. pour the peanut curry mix into the crockpot along with the red bell pepper & soy sauce. mix everything together. and turn your crockpot on high for 4 hours our so (or low for 6-ish hours). after about an hour or two of cooking stir in the cilantro (or just put it in the beginning it really doesn’t matter)

this made so much food. i’m going to be eating peanut curry chicken for the next 12-14 years

enjoy on a salad with sweet potato & topped with avocado slices.

which is exactly what’s for lunch tomorrow!

cawfee tawk! what’s the most random thing you’ve ever done with a crockpot? i saw this recipe on pinterest where you put a can of sweetened condensed milk into a crockpot and it turns into caramel! SO cool!

  1. That looks super good. I don't think I have done anything too random with my crock pot, I guess I am just not that adventurist. I do love making oatmeal in the crock pot tho!

  6. OH. MY. I definitely need to make your peanut curry chicken! Panang (basically what you made) is my favorite dish to order when I go out for Thai food. I love it so so SO much, but for some reason I've never tried making it at home. Now I have no excuse! YUM.

  7. Glad you had such a nice weekend! Mine was good too...but didn't involve nearly enough sleep- ugh, struggling this morning. The roasted sweet potatoes look yummy. And I'm totally going to have to try the crock pot version of that soup! That peanutty flavor is so good. I've made applesauce in a crock pot. Not that random- but very good.

    This recipe sounds AMAZING. I need a crock pot SO BAD! It's on my registry, I believe, and I may decide to buy it before someone buys it for me because I'm THAT antsy!

  11. Yum! I made something similar a long time ago but totally forgot about it! So delicious. I made a cake in a crock pot once.
