i’ve been ultra busy this week at work, so the thought of blogging, well it wasn’t even a thought!
this week? fughetabouddiit.
check out rainbow bright’s breakfast this morning.
can i tell you how long it’s been since i’ve made a nice & delicious stovetop bowl of ready-to-eat on the spot oatmeal.
that would be egg white oats with blueberries, strawberries, ground flaxseed & peanut flour.
it’s almost berry season!

Ok girlfriend, you must share how you make your egg white oats :) So funny you posted them :) I usually don't make egg white oats, but did TWICE this week :) mmmm I stirred in blackberries, too!

NuNaturals is THE BEST stevia and I bet those lemon drops will make the best lemon desserts ever. I hope they start making other flavors too!

well anyways like i was saying.
besides being busy, i've still be managing to get in some good eats, good workouts & a little bit of me time.
you know what that means.
100 pages left of book 3! what am i going to read next!
i was thinking on the stairmaster this morning what it would have been like to listen to 50 shades of grey as a book on tape..
anyone else in love with christen grey as much as me?
yesterday i spent the day out east surveying greenport and getting myself amped up for summer.
i even had a self portrait photo shoot as i laid in the row bow catching some rays
..girl needs to get a grip.
my favorite meal lately has been flaxmeal chicken nuggets.
honestly i can’t stop making them
they’re so easy too! all i do is marinate cut up chicken breasts in whatever i feel like, either coconut oil, sesame oil, soy sauce maybe some fresh basil or lime juice, maybe a pinch of fish sauce (obviously not all of those together)
then i pour a good heaping of bob’s red mill ground flaxseed meal into the ziploc bag. shake shake shake wiggle wiggle wiggle. you know until all of of the chicken bits are covered
then i bake at 375 for about 20 minutes. perfection! especially with green beans, broccoli, broccoli slaw and tahini
crispy little suckers.
well i better run, i’ve got work to do, sweet potatoes to cut, turkey sliders to make, a baby shower gift to purchase & eggs to buy.
not sure what my blogging schedule will look like this week, but i’ll be back when i can!
