looks like i’m posting up here for the next two days…
something tells me this time around it might be a little more serious..
on the bright side – a two-day stay-cation means i can capitalize on the anthroplogie extra 25% off online sale, re-organize my pinterest boards & test out all of our new candles…
i don’t know much about the weather – but when new york city shuts down it’s primary mode of transportation – i’m thinking it’s pretty serious…
some eats from the weekend
pre-workout blueberry oat bran pancake with saturday AM coffee – my love & my favorite part about saturday mornings – a solid frothy cup of joe. & some muscle gauge country lemonade bcaas to power me through a brutal full body workout

satueed kale & brussels in coconut oil with laura’s cinnamon & flax crusted chicken breast & butternut squash
i decided to be a little adventurous and gave elana’s pantry carrot cake with coconut cream frosting a whirl - i figured what better way to experiment – with the harshest food critics around i knew i would get an honest opinion
the frosting called for full-fat coconut milk and since i did all of my food shopping at trader joe’s and there was no full-fat coconut milk – i went with half coconut cream & half lite coconut milk – oy this shit is thick
to keep me from eating all of the cake batter & frosting – while the frosting was settling and the oven was heating up i made my own carrot-y mid-afternoon snack
leftover carrot shreds from the cake cooked in coconut oil and scrambled with egg whites & cinnamon – eaten with half a p28 bagel schmeared with almond butter (is schmeared not such a cool word…?)
praise the good lord the almond butter is back – i almost peed my pants with joy when i saw the shelves stocked (hoarded three extra with no shame)
carrot cake pre-frosting
i may have started to frost the cake a little too soon (when the cake was still warm) which posed a problem because the frosting is made with coconut oil – and we all know that when coconut oil hits heat it melts – so i frosted half – realized i screwed up and then frosted the rest later
honkin huge pieces of almond flour carrot cake with delicious (and somewhat chunky coconut frosting)
the reviews of the cake were mixed – half said they really liked it – everyone really liked the frosting – and half said it was just so-so – i think it depends if you’re a carrot cake person then you’ll definitely love it! it’s a different take since it’s made without an real flour but i think it came out fantastic – non paleo people (including me) loved it – i think i would definitely make again – maybe next time into cupcakes!
i was actually surprised everyone had room for huge pieces of carrot cake after we feasted on steak & potatoes
van had a winning birthday – just sayin.
alright well i’ve got nothing to do for a whole two-days! better start planning…
