chocolate chip egg nog muffins

who loves egg nog?

you? you? you? let me tell you a little story about egg nog

i hate it. ugh. glewgh. glug.

i have a good & valid reason though.

i used to chug egg nog like it. was. my. job.

truth. somewhere in our family photo albums there is 99% likely a picture of my ‘glugging’ egg nog.

because when the holidays came a-knockin’ you best believe we had a carton of axelrod egg nog in our refrigerator.

chugging eggnog during the holiday season was just another normal day in the life. i didn’t like egg nog – i freaking loved it.

after many many many years of glugging eggnog i just couldn’t hack it anymore. it was like a bad bad bad night of tequila – you know the kind where you find yourself dancing on bars at mcfaddens and then you end up at a 2AM strip club (not saying i’ve ever done that…) well that was what egg nog eventually felt like to me

so you could imagine my gag reflux when i opened the fridge and found this container staring back at me

it wasn’t axelrod – even worse – i felt cheated on – it was trader joe’s.

my uncle is a huge egg nog fan – it’s probably genetic to be honest – so deej stocked it in the house for him for christmas. he was the only one who had a glass – so there was plenty leftover post christmas

every day i opened the fridge it would stare at me – drink me julie – drink me – come on just drink me.

ironically enough christmas eve the little chobani elf dropped off a large & in charge box on my front stoop

my brain got churning – and just like that the baking itch came a scratching.

chocolate chip egg nog muffins makes 6 GIANT muffins

  • 2 1/2 cups whole wheat flour
  • 1 cup 2% plain chobani greek yogurt
  • 1/2 cup egg nog
  • 1T baking powder
  • 1/2t baking soda
  • 3/4 cup pure cane sugar
  • 2 eggs
  • 1T vanilla extract
  • 1/2 cup dark chocolate chips

preheat your oven to 350. spray a 6 cup muffin tin with non stick spray

in a large bowl mix together your dry ingredients. in another smaller bowl mix together your wet ingredients making sure the yogurt, egg nog & eggs are fully mixed (no clumpies!). pour the wet mixture into the dry mix – don’t over mix but toss to combine – throw in your chocolate chips – and don’t be afraid to be overly generous with them!

spoon the mixture into the muffin tin – equally distributing between muffin holes

bake for approximately 30-35 minutes or until a toothpick comes out clean

allow to cool on a cooling rack before consuming

don’t be like me and burn your mouth on one

look at the size of these beauties! standing next to a can of tuna for comparison sake

the best part? no egg nog hangovers!

  1. I've never tried eggnog before but I definitely have an aversion to tequila. I drank for a couple of years and LOVED tequila. I couldn't understand why people didn't like it or gagged at the thought... until I got unbelievably drunk and was sick all night. Now the thought of tequila makes me sick!

  2. I think you are a genius! I haven't had eggnog in forever and now I really want to make these muffins! I'm going to have to search my trader joe's for the light eggnog now.

  3. Nice, you can have your egg nog....and eat it too!! I like eggnog, but it's not one of those things I crave or HAVE to have every year. It's an acquired taste. I've acquired the taste, but.....I still don't really love it.
    I have a nasty hangover story from Rum. I still can't drink rum to this day, unless it's completely covered with pina colada flavor. COMPLETELY covered.

  4. I am the same way! I used to love eggnog...now I just can't drink it. It tastes too...thick? I dunno, freaks me out. I do like the flavor though, so an egg nog muffin sounds just delicious! I can't really drink orange juice any more due to alcohol. When I was younger, I loved screwdrivers. After getting sick once...ok twice...ok maybe more...orange juice just makes my tummy turn!

  6. Well. These look great. Honestly, I've never tried egg nog. For no reason. I think it seems too thick but I like the flavor. The idea of baking with egg nog is great! Maybe I can snag some before the season ends.

  7. I'm not a huge egg nog lover at all actually. Don't know why, the eggy-ness of it possibly ha. I'd actually chose tequila over it any day...that may not be a good decision, but it's the truth. I love how big these muffins are! Small muffins never do anything for me.
