hi friends!
i feel like i haven’t been around in so long. here’s the thing – i go on a blog woo hoo and then a blog fade out – you know what i mean? plus things have been crazy busy at work so ya know!
this weekend has gone by so fast. friday night my lady friends and i went out for a good old time – typical long island friday night fist-pumping – but ey whataya gonna do right?
i had plans to hit crossfit yesterday because the WOD looked awesome - but i didn’t get home until past 2AM and then slept in until almost 11AM so i just decided to take the day off – enjoy a leisurely brunch in, get in some food shopping and just chill for the rest of the day
i made a big fat pumpkin pancake and globbed it off with almond butter/peanut butter – coffee with my feetsies up & it was glorious.
i honestly did nothing yesterday and left the house only to go food shopping because i had negative food left in the house
on a food note this week has just been utterly delicious.
i’ve been on a MAJOR salmon/tuna patty kick.
the way to make a solid patty is to sauté basil, chopped up kale & mushrooms in coconut oil and then add it to the tuna or salmon mix
these were a whole can of salmon, mixed with my sautéed basil mix, a dollop of dijon mustard, some hot sauce & an egg – then i just cooked them in coconut oil on the stove top & had some steamed broccoli with avocado & salsa verde
last weekend i made spaghetti squash bolognese from practical paleo and it was honestly SO freaking amazing – i can’t wait to make it again
it made so much – i ate it like 5x this week – and wanted to cry when it was over
if you don’t have access to that recipe – well then you need to find a way to get to it. just sayin’ – it’s THAT good.
on another food note – i’ve also become obsessed with tessemae’s marinades
they are gluten free, dairy free, sugar free – just all natural deliciousnes..
i saw them on paleomg’s blog a few weeks ago and then picked up some at whole foods last weekend/this weekend
i’ve marinated chicken in them, sautéed vegetables in them & used them as salad dressings. – i think i’ve found a new addiction. the lemon chesapeake (below is chicken marinade lemon chesapeake) is by far my favorite so far. it’s delicious. and amazing. and i can’t get enough.
i’ve also found the perfect way to end every. single. meal.
let’s move on.
i bet – i bet a million dollars – that you are wondering how crossfit is going. HA! you’re probably not at all – but that’s okay.
crossfit is going great – i’m so in love with it and i can already feel myself getting stronger
i’ve had some shoulder problems – especially when it comes to the snatch – my shoulder popping out (which i’ve had problems with since my volleyball days) seems to be coming back – but it’s great because some of the coaches are working with me on some mobility exercises – and i’ve also been scaling the WODs to prevent further injury
this morning we worked on our 3 rep front squat max – i hit 95lbs – could maybe have gone a little heavier but i’m definitely feeling about 75% – hoping it’s not the flu – by the time we got to the WOD (which was 1500m row, wall balls & ring dips) i was spent.
my favorite WOD this week – was this:
AMRAP 15 minutes
-squat snatches 8 reps (i scaled with squat cleans)
-hand release push-ups 8 reps
-box jumps – 16 reps (20in box)
i scaled the push-ups with on my knees and used 45lbs for the squat cleans (i probably could have gone heavier – next time) – i finished in 6 rounds with 8 box jumps from 7 rounds – it was killer! the box jumps were pure murder
and i have the shoulder bruises (they look like golf balls) and collar bone scrapes (they look like hickies) to prove that it was a brutal one
either way – i’ve been having so much fun – and totally not taking myself too seriously. it’s all about fun! plus deej told me this morning that my “ass looked bigger” OKAY. good or bad – either way i “beyonced” her with it
well i’m off to make some meatloaf for the week!

Outside my run this morning and a little TJs action, things have been pretty relaxed around here too!!

ReplyDeleteI LOVE Tessamae's dressings/marinades! My Whole Foods is always sampling them...and I mean *always.* The lemon chesapeake really is as amazing as you say.
ReplyDeleteI end every.single.meal with chocolate too. Really. People don't believe me when I tell them this, but if they were to look inside my purse, I think they would. I always have at least one Lindt bar hanging out in there, but it's usually more like two (or one + a few random smaller chocolates).

Yay for a bigger ass!! I definitely want to try that bolognese. I am so easily pleased with Paleo recipes because I never made an effort to cook such good meals before, so now everything tastes amazing!
