last week i ate out A. LOT. between California (which every meal except breakfast was at a restaurant) and then moving – which every meal that I did not have access to a kitchen was eaten out I was more than ready to get my feet & hands dirty in the kitchen.
it’s a good thing I transferred all of my frozen food from Long Island to Brooklyn because en transit I found a bag of chicken breast I had pre-marinated and then stuck in the freezer for future emergency situations
WHY is it that I am consistently buying more meat without defrosting the meat I have already purchased in my freezer? Please tell me I’m not the only one who hoards meat…
right. anyways moving on. I took this opportunity to defrost & depart with my marinated chicken and coordinate a “Welcome to Bay Ridge” dinner for me and the roomie.

welcome to brooklyn baked chicken
- 2-2 1/2lbs chicken breast (cleaned and sliced into strips)
- 1/4c Tessemae’s Southwest Marinade/Dressing
- 2-3c sliced red, yellow & orange mini peppers
- avocado, iceberg lettuce (for lettuce cups), mexican cheese (if you please)
- a BIG appetite
- & working cable
don’t ask – about the working cable? don’t let me start on the anger I have felt towards Time Warner over the past 5 days…
we’re good now.
on the other hand – Tessemae’s is the love of my life. Now if only I was able to marry into the Tessemae’s family – I would have Tesse on hand for.ever.

right. so about that dinner. all you have to do? marinade the sliced chicken, slice the peppers – toss everything with extra Tessemae’s in a bowl and then bake for 25-30 minutes at 400!
BOOM bam. serve with avo.
